Kerala Chicken Roast



This turned out to be my favourite recipe of all time.. I got the idea when I was scrolling through Facebook and I wished to try that out. Luckily I had all ingredients on hand and I landed on to the recipe soon. This is however my version of the adopted recipe..
It is pretty easy with a good amount of spices and flavour in it.. Here is the recipe

Ingredients
For Marination:-
Chicken- 1/2 kg
Chilli powder- 1 tsp
Turmeric powder- 1/2 tsp
Ginger garlic paste- 1 tsp
Salt- as per taste
Curd- 1 tbspn

For masala:-
Onion- 2 cubed
Capsicum- 1 cubed
Red chilli powder- 1 tbspn
Garam masala- 1 tbspn
Fennel seeds- 1 tsp
Coconut oil- 1 tsp

Here we begin
1. Marinate chicken pieces with all ingredients listed under marination part. Keep it aside for 30 minutes
2. Heat oil in a kadai and add fennel seeds. Add in curry leaves if needed
3. Add in onions..
4. Once it turns soft, add capsicum. Saute well
5. Add in marinated chicken pieces and mix well
6. Water will leach out from chicken and allow it to cook
7. Add in spice powders.
8. Mix well and let the excess water evaporate
9. Add coconut oil and mix well. This is an optional step..
10. Serve with roti or rice

Now towards step wise illustrations

1. Take chicken pieces

2. Marinate well with all ingredients listed under marination part above


3. Heat oil in a pan and add fennel seeds. Let it crackle

4. Add onions and saute well

5. Add in capsicum and saute

6. Once it is sauted well, add marinated chicken pieces

7. Add chilli powder and garam masala

8. Now give it a good mix

9. Add in a splash of water. More water will leach out from chicken itself

10. Allow it to cook well

11. Add in garam masala

12. Allow the water to evaporate and keep on stirring

13. Serve hot with your favourite rice/ roti
