Vegetable Kurma
I make chapathi often, literally everyday. I always wonder to try out variety recipes at my kitchen. This recipe is actually from my mom, except some additions from my part. It is always a success in my dinner table. I serve it with chapathi, appam or even rice. It goes pretty well with anything. Yesterday I made this curry and served with chapathi. It has good flavours of whole spices and coconut. You can add any veggies of your choice. Here goes the recipe....
Ingredients
Onion- 1 large chopped
Beans- 1 cup chopped
Carrot- 1 cup chopped
Potato- 1 large chopped
Red chilli powder- 2 tsp
Turmeric powder- 1/2 tsp
Corriander powder- 1 tsp
Garam masala- 1 tsp
Water- 1 cup
Mustard seeds/ Kaduku- 1 tsp
Oil- 2tsp+1 tsp for tempering
Curry leaves- 1 spring
Coriander leaves- 1 tsp
For coconut paste:-
Coconut- 1/2 cup
Fennel seeds/perumjeerakam- 1 tsp
Cloves/grambu- 4-5 nos
Cinnamon/ karukapatta- 1 small piece
Water- 2 tbspn
Method:-
1. Heat oil in a pressure cooker and saute onions. Add veggies and saute for a while..
2. Add in spice powders, water and salt and cook for 2 whistle..
3. Take all ingredients listed under coconut paste in a blender and puree it finely..
4. Heat oil in a kadai and splatter mustard seeds and curry leaves..
5. Add in cooked veggies and mix it up. Bring it to boil and add coconut paste a d garam masala. Mix it up well(Add water as per you need your gravy consistency)
6. Add in coriander leaves. Serve hot...
Now towards step wise illustration...
Heat oil in a pressure cooker
Saute onions for a while
Add in veggies
Add in spice powders
Add in salt
Cook for 2 whistles
Cooked well..
Take coconut,fennel seeds, cinnamon, cloves in a blender
Add in a dash of water and puree it out
Add oil in a kadai and splatter mustard seeds
Add in curry leaves
Add in cooked veggies
Add in coconut paste
Mix it up well
Bring it to boil and add in garam masala
Mix it up well and add corriander leaves
Serve hot with roti or your favourite combo
