Lemon Rice




Hi all... Landing to the new recipe of the week lemon rice.. It was made quiet often by mom during my school days. It makes a perfect lunch. I would love having this at those times and mom would prepare it atleast twice a week. The main aspect is the ease of cooking it. When i made it for my hubby, he was tasting it for the first time and he just loved it.And it turned out be a must-made recipe in a week... Now marching towards the recipe.

Ingredients

Basmati rice- 1 cup
Lemon juice- 3 tbsp/  one lemon's juice
Turmeric powder- 1 tsp
Oil-1 tsp
Mustard Seeds/ kaduku- 1 tsp
Urad dal/ Uzhunu parippu- 1 tsp
Asfoetida/ kayam- a pinch
Dry red chillies- 2 nos
Curry leaves- 1 spring
Water- 2 cups
Salt to taste
Peanuts/ Cashews- Optional

Here goes the recipe....

1. Lets start by making the rice. Soak basmati rice in water for 20-30 minutes

2. Cook it with  salt in 2 cups of water and keep aside

3. In a kadai put oil and add mustard seeds and urad dal and let it sizzle.

4.Once it started sizzling, tear red chillies and put in the kadai with curry leaves. It has to be done in a low flame. Make sure you put fresh curry leaves. I avoided that part since I didnt have fresh i=ones in hand

5. Add in lemon juice and turmeric powder.

6. Add in rice and mix well.

7. Add asfoetida powder and mix gently.

8. If you are using nuts. fry it and add to the rice.. Serve hot.

Notes

1.Don't overcook the rice. If you overcook, it will get break while mixing.

2. The seasoning part has to be done in low flame.


Now towards step wise illustration

Soak rice in water


Bring lots of water to boil with salt

Add the soaked rice 

Cook till 3/4th done and drain. Cool completely 

In a pan, heat some oil 

Add in mustard seeds and urad dal 

Add in dried red chilli

Add in lemon juice 



Add in turmeric and hing(I skipped taking pics of hing)

Add in cooked rice 

Mix it up well 

Serve hot with pickle and pappad
