Uzhunnu Vada / Medu Vada




Good evening lot..... Apart from making dishes, I would like to share with you some snack recipes as well.. Uzhunnu Vada is a famous South Indian snack. There are different add ons to this like Sambar Vada, Thairu vada etc. However the recipe of vada is same in all these..

This snack is made commonly at home. However I have always kept a distance in preparing this. This is because once or twice when I made it turned out to be a disaster. But ever since cooking turned out to be my passion I always wanted to try this snack. I have bookmarked it in my to-cook list.

Making this is easy for all you have to take care of some aspects as well.. So this time when I made it it turned out perfectly well and I served it with tea... Here goes the recipe...

Ingredients

Urad Dal- 1 cup
Uncooked Rice- 2 tbsp
Green Chillies-6 nos
Onion- 1 chopped
Black pepper corns - 6 nos (optional). I haven't used
Ginger- 2 tbspn
Curry leaves- a spring
Salt- as needed
Oil- for deep frying

Be ready with all these ingredients... Off we land to the recipe...

1. Soak urad dal and rice in water for 2-3 hours
2. Chop green chillies, ginger, curry leaves and onions finely.
3. Drain the dal and move to a blender with very little water and blend to a smooth paste.
4. Move the batter on to a vessel and add the chopped veggies and salt. Mix well.
5. Heat oil in a kadai.
6. Now lets shape vadas.. I will share with you 2 ways of it..
    (a) Wet your palms with water. Take a spoonful of batter in the wet hand and shape it. Make a hole            in the center and carefully drop it in the oil.

     (b) Take a plastic sheet. Wet it and place the batter on to it. Shape it and drop it gently in the oil.

I used the first method. For first time triers I suggest the second method.
7.  Put in a low flame and allow it to get cooked.Flip and cook till you get a golden color on both        sides.
8. Serve hot with chutney or sambar

Notes

1. You can add pepper corns if you need vadas a little spicy.
2. Remember not to put the batter out for more than 2 hours. It is best to make vadas soon you make the batter.
3. While making the batter, do not add too much water, because when frying, it will drink lots of oil. Also the vadas might break while putting in hot oil.

Now towards step wise illustrations...

Soak urad dal and rice in water  

Soak it well for 3 hours 

Move it to a blender 

Puree it smooth 

Add in chopped ginger,chilli curry leaves and onions

Season with salt 

Mix it up well 

This is the consistency 

Heat oil in a kadai 

Wet palm and drop a dollop of batter

Shape it and make a hole in the center 


Drop it gently in the hot oil 

First batch is dropped 

Keeping in a low flame cook both sides 

One side is done.. Flip and cook 


Both sides well cooked and crispy 

Thewhole batch is done... Enjoy with steaming tea
