Coconut Milk Vegetable Biriyani
This is yet another biriyani recipe which is easy to make..It gives a good flavour since the veggies are cooked in coconut milk. Ingredients
Basmati rice- 2 cups
Coconut milk- 2 cups
Beans- 1 cup
Carrot- 1 cup
Onion- 1 medium
Fennel seeds- 1 tsp
Pepper corns- 1 tsp
Cloves- 4 nos
Cinnamon stick- 2 small
Garam masala- 1 tsp
Cashews- 10 nos
Oil- 1 tbspn
Salt- as needed
Corriander leaves- 1 spring
Water- 2 cups
1. Soak rice in water for 20 minutes..
2. Heat a pressure cooker with oil and add all spices..
3. Add in cashews to this
4. Add in onions and saute for a while
6. Add in ginger garlic paste
7. Add in thick coconut milk
8. Add water to this.
9. Add in chopped coriander leaves
10. Add in garam masala
11. Add in soaked rice
12. Add salt as per your taste
13. Cook for 2 whistles..
14. Serve hot......
