Coconut Rice/ Thengasadam





Itz my favorite recipe of all time. We make this quite often at home. However my mom n myself prepares it differently. Mom prepares it by using coconut milk and mine is dessicated coconut. Here I am sharing my version of making it. I will share mom' s version soon....

Ingredients
Basmati rice- 1 cup cooked
Dessicated coconut- 1 cup
Ghee/Oil- 1 tbspn

For tempering
Ghee- 1 tsp
Mustard seeds- 1 tsp
Urad dal- 1 tsp
Chana dal/ kadalaparippu- 1 tsp
Red chilli- 1 nos
Curry leaves- 2 springs

Here we go..
1. Prepare rice . Leftover rice is the best option.
2. In a pan, add ghee and fry coconut till golden.
3. Add in cooked rice on to it and mix well. Keep aside. ( I used a small pan for frying coconut, hence for mixing i transferred it to another big vessel.)
4. Now its tempering part. Add ghee on to a pan.
5. Add mustard, chana dal, urad dal and let it splatter
6. After it splatters, add in red chilli and curry leaves
7. Pour this onto our rice and mix well..
8. Serve hot......
