Carrot and Egg Stir Fried Rice


This is one of the recipe which turned out really well for me. I was planning to make a vegetable fried rice but I had only carrots on hand. So I switched into making on to a egg fried rice. I googled for recipes and I really liked this one and immediately tried it out. It is pretty easy to make and has a chineese flavour in it. It turned out to be just lovely. Ingredients

Basmati rice- 1 1/2 cups
Carrots- 1 cup grated
Onions- 1 large chopped
Eggs- 2 nos
Pepper powder- 1 tsp
Tomato sauce- 2 tbspn
Soya sauce- 1 tsp
Chilli sauce- 2 tsp
Salt- as per taste
Oil- 1 tsp

Her we go...
1. Prepare rice by soaking it for 30 minutes and boiling in lots of water for 5-7 minutes. Drain and cool completely.Left over rice can be used as well
2. Heat oil in a pan and saute onions till translucent. Add in carrots and close it with a lid and cook in low flame for 10 minutes
3. Add soya sauce, tomato sauce and chilli sauce. Mix it up well
4. Make a well in the middle of kadai and crack open eggs and stir it well
5. Add in cooked rice on top of it and spread evenly.
6. Add in pepper and cook for 5 minutes in low flame
7. Serve hot

Now towards step wise illustrations 

Boil lots of water in a pan 

Add in soaked rice 

Bring it to boil 

Close it with a lid 

After 7 minutes, it is well cooked 

Drain and set aside 

Heat oil in a kadai 

Saute onions till translucent 

Add in some grated carrots 

Mix it up well 

Close it with a lid and cook for 10 minutes 


Veggies are well cooked 

Add in some soya sauce

Throw in some chilli sauce 

Add in tomato sauce as well 

Mix it up well 

Make a well in middle of kadai 

Crack open eggs 

Mix it up well and mix with veggies.( Forgot to take pics) 

Spread rice evenly 

Mix it up well and add some pepper powder 

Serve hot
