Restaurant Style Egg Fried Rice
I was craving to have fried rice for lunch. I found some eggs in fridge. So I thought of making egg fried rice. I had earlier shared a normal version of fried rice in this blog. However this one is a typical restaurant style preperation. I could just relate the taste of fried rice with the fried rice I had in a nearby restaurant. It was a total hit in my kitchen and it turned out just wow!!!! So here goes the recipe

Ingredients
Eggs- 3 nos
Onion- 1 big sliced
Capsicum- 1 small sliced
Soy sauce- 1 tsp
Vinegar- 1 tsp
Salt- as per taste
Sugar- 1/2 tsp
Pepper powder- 1 tsp
Oil- 1 tbspn
Fried onions- to garnish(optional)
For rice
Basmati rice- 1 cup soaked
Water- 1.5 cup
Salt- as per taste
Method
1. Soak rice in water for 30 minutes. Pressure cook rice with water for 1 whistle. Wait till pressure falls and cool it off completely. Fluff the rice up with a fork
2. Crack open eggs in a bowl. Add in salt and beat it thoroughly. Heat oil in a pan and scramble eggs. Remove it to a plate
3. Heat oil in a pan and saute onions and capsicum well.
4. Add in vinegar and soy sauce
5. Add in pepper, salt and sugar and saute well
6. Add in cooked rice and toss well. Make sure you don't break the rice
7. Add in scrambled eggs and mix well
8. Enjoy hot
Now towards step wise illustration
Take soaked rice on to a pressure cooker
Add 1.5 cups of water
Add in salt
Pressure cook
Rice is completely cooked
Allow it to cool and fluff it up with a fork
Crack open eggs in a bowl
Add in some salt
Beat it up
Add oil in a pan
Pour the egg mix
Scrambled in
Remove it to a plate
Saute onions for a while
Add in capsicum
Add in vinegar
Add in soy sauce
Add in salt and sugar
Saute well
Add in cooled cooked rice
Toss well without breaking rice
Add in \scrambled eggs and mix gently
Enjoy hot
You can garnish with fried onions or potatoes as per your choice
