Delhi Street jalebi
This is a Street Food.... I had it once when we were on a trip to Delhi.. The hotel in which we were residing was on the midst of a Street. As we were walking around to buy some Delhi sweets for all at home, we found a bakery and stepped in.. We ordered some sweets and waited. At that time I noticed an old man at the corner making something. His hands were moving in such a great speed that it was amazing to watch it. My hubby was standing at the bill counter and I approached him.. He smiled and asked "Jalebi logi kyaa bittojiii" ? I just nodded and he gave me a plate of hot Jalebi. It was toooo toooo good... My hubby came by then and he too ordered the same. It was a plateful of jalebis with just 10 rs.. I just asked him in the Hindi I know how to make it. He briefed the recipe which was later translated to me by my hubby.... So here I go with another sweet recipe..

Note:- This is my version of the recipe because I couldn't make perfect shaped Jalebi. However no compromise in taste...
Ingredients
All purpose flour- 1/2 cup
Cornflour- 1 tsp
Curd-1 tsp
Vinegar- 1 tsp
Baking soda-1 tsp
Orange food color- a pinch(optional)
Water- 1/4 cup
Sugar syrup
Sugar- 1 cup
Water- 1/4 cup
Lemon juice- 1 tbsp
Here we begin.....
1. Mix together maida and cornflour..
2. Add in curd to it and give a good mix
3. Add in vinegar
4. Add in red food color. This is an optional step. You can avoid it too
5. Add in water and mix it well. Make circular moves so that it is evenly distributed...
6. Make a smooth batter..
7. Add in baking soda and mix well..
8. The batter will bubble up like this.
9. This should be the pouring consistency.
10. Take an empty ketchup bottle and pour the batter in.
11. Now let's make the sugar syrup.. Take a cup of sugar and add in water. Bring to boil till it reaches one string consistency.. Add in lemon juice.
12.Now let us fry the jalebis. Add oil in a kadai and add ghee. It gives a flavour to jalebis.
13. Now carefully make spirals. I just couldn't make it.. Hence I made it in my own way.

15. Dip fry jalebis in sugar syrup for a second and remove to a plate. Dipping it longer in sugar solution makes jalebis turn soggy.
16. Crispy jalebis are ready. Enjoy yummy jalebis.
