Puris for making pani puris...




This was one of the recipes which I have been bookmarked for days. This is actually the  base of all chat items. In result, it has to be puffy, crispy and perfect. This one is perfect. I made this on a day, tamarind and dates chutney the other day and finally assembled them as my lovely pani puris. Here I am sharing with you the recipe for puris......

Ingredients

Rava/ Sooji- 1/2 cup
Maida- 1.5 tbsp
Water- 1 cup
Oil - 1/2 tsp + For deep frying
Salt- a pinch

Off we land in to the recipe.

1. Heat water in a sauce pan.


2.Take sooji and salt in a bowl.


3. Add warm water to this and rub it well with your hands.


4. Add maida to this and knead well to a smooth dough.


5. Drizzle some oil and knead well.


6. Close it with a bowl and keep it aside for 30 min.

7. Divide into equal sized balls.

8.Roll it into a thin sheet. It has to be this thin.


9. Use a small lid and make small circles


10. Make small circles.

11. Heat oil in a kadai.


12.Drop it in the hot oil and press on the top. It will bubble up.


13. Cook in medium flame on both sides.


14. Here is the output......... Hot Crispy Puris....


Tips:

1)Don't add too much water and flour in the dough, the puris will turn
 the poori soggy.
2)Fry the puri in medium hot oil for a longer time makes it crispy.
