Kerala parotta..
This was the recipe I have been trying to make for long, but have failed miserably in my first attempts. This one is rather an easy method and it just worked out for me. The main aspect of this method is time, because the dough has to rest about 4 hours and after making it to balls it should rest about nearly Van hour.My parottas came extremely flaky and fluffy.. So here we land to the recipe.....
Ingredients
Maida- 2 cups
Warm Milk- 1 cup or as needed
Sugar- a pinch
Salt- a pinch
Oil- 1 tbspn+ little for frying both sides of parottas
For oil paste
Maida- 3 tbspn
Oil- 4tbspn.....
Let's begin.......
1. Mix together maida, salt sugar
2. Add milk and oil to this and knead to a dough
3. Cover it with a cloth and let it rest for 4 hours..
5. Now let's make the oil paste.. Take maida- and oil in bowl and mix well and keep aside. Our paste is ready..
7. Place a ball on your working surface..
8.Roll it out as thin as possible..
10. Now cut it into thin strips using a knife.
11. Place one strip over the other carefully..
12. Make it a ball again by rolling from one end.
13. Your ball is ready..
14. Place all the balls in a vessel and drizzle some oil..
15. Cover it with a cloth and keep aside for an hour.
16. After an hour, take the balls out and roll it out. It should be little thick.
17. Heat a tawa and cook both sides..
18. Once you make about some 5 parottas, transfer it to a flat surface.
19. Keep your hands on both sides of the parottas and clap your hands. The flakes will separate..
20. Parottas are ready... Serve hot....
