Besan Ladoo


My friends and family knew about my craze for sweets. I love relishing as well as making different kinds of sweets. My mom and aunt are experts in making sweets. During diwali and other festival times we all gather up and makes many a kind of sweets at home. This was one such recipe I adopted from my aunt. 
She makes besan ladoo quite often at her home and I love it a lot. I have tried this in my kitchen and it was a total flop!! When I have been to my aunt once I asked for the ladoo and also shared my experience in making the same. She just showed me the whole process and I was quite confident of trying that out again in my kitchen. 
It was in my to-do list for quite a long time and yesterday I made it. Initially I was a bit tensed but I followed her recipe as the same and yes! this time my ladoos turned out just perfect!!!! Everyone loved it a lot and I send some to my aunt and she gave thumps-up for it. So here I share the recipe with you....

Ingredients
Besan flour/ Kadala mavu- 1 cup
Powdered sugar- 1/2 cup
Ghee- 1/4 cup+ greasing palms
Milk- 2 tbspn
Almonds- optional

Here is the recipe...
1. Heat a pan with ghee and add in besan.
2. Mix well. Make sure besan get mixed up with the ghee
3. Keep in low flame and keep on stirring...
4. Continue stirring and you can see besan releases ghee. This is the correct consistency
5. Move it to a dish and allow to cool completely..
6. Once it is cooled, add in sugar and mix well.
7. Make a well in the middle and pour milk.
8. Now mix it up well. Don't knead.
9. Once it reaches the folding consistency, Grease palms with ghee and shape ladoos.
10. You can either mix almonds in the ladoo mix or garnish with the same.
11. It will stay good for around 2 weeks at room temperature..

Now towards step wise illustrations

1. Sieve besan to avoid any lumps..


2. Heat a pan with ghee

3. Add in besan

4. Mix it well. Make sure it gets mixed up with ghee well

5. Stir and cook well in a low flame. Keep breaking the lumps

6. It will take around 30 minutes for besan to get cook well. It will start releasing ghee from sides and also turns golden. This is the consistency



7. Move to a dish and allow it to cool

8. Once cooled, add in powdered sugar

9. Mix it well 

10. Make a well in the middle and pour milk

11. Mix it up well

12. Now start shaping. Grease palm with ghee and start shaping. This will help in making ladoo without any cracks.

11. Now shape whole lot........

Tips:-
1. Add sugar only when the besan mix is cooled completely. Else it will turn watery and we will not be able to shape ladoos

2. Keep cooking in a low flame, if you put in a high flame besan will change colour quickly, but will remain undercooked. It won't taste good

3. While adding milk if the mix turns out watery, close it with a lid and refrigerate it for 15 minutes and then starts shaping..
