Laccha Paratha
This was in my to-do list for a pretty long time. Ever since my Kerala Parotta turned out well, I was intended to try out Laccha Paratha. It is pretty easy to make and goes well with veg/nonveg dishes. All you need is to do it out patiently. I have clearly mentioned all steps below.

Ingredients
All-purpose flour- 1 cup
Wheat flour- 1 cup
Baking soda- 1/2 tsp
Salt- as per taste
Sugar- a pinch
Water- 1 cup
Oil- 1 tsp+ for greasing
Here we go...
1. Take all purpose flour and wheat flour in a bowl. Add salt, sugar and baking soda. Mix it well with hands.
2. Add in water little by little and knead well
3. Drizzle with oil and cover it with a cloth. Let it rest for 30 minutes
4. Divide it into equal parts.
5. Take a ball out of it and flatten it out. Roll it out thin
6. Spread oil on top of this and start pleating.
7. Pull it out as much as you can. Oil gives lubrication and it increases in length
8. Now fold it out and start rolling again
9. Now, heat a pan and put the rolled paratha.
10. Drizzle oil and cook both sides
11. You can see flakes in paratha. Serve hot with your favourite side dish
Now towards step wise illustrations
1. Take all purpose flour in a bowl
2. Add in wheat flour
3. Season with salt
4. Add in sugar
5. Add in baking soda
6. Rub it well with your hands
7. Add in water little by little and knead
8. Drizzle some oil.Mix up well and cover with a damp cloth
9. Cut it into equal parts
10. Make a ball out of it
11. Dust some flour in and flatten it out
12. Drizzle with oil
13. Dust some flour and start pleating
14. Pull from both sides. It will increase in length
15. Roll it out carefully
16. Tada! It's done beautifully
17. Repeat the process for rest of the dough too
18. Now flatten it out
19. Heat a tawa and place the rolled paratha
20. Once you see bubbles on one side, flip and cook
21. You can see flakes as well... Serve with your favourite side dish
