Hyderabadi Mutton Biriyani
You guys knew about my love for biriyanis. I have posted some biriyani recipes in my blog as well.. This is a special biriyani because I haven't ever made Mutton Biriyani in my life. I googled for recipes, came across many and finally ended up in my own version of it.. All you need is some patience and you can master the art of making biriyani... I have clearly mentioned each stage with pictures..Here I share you the recipe..

Ingredients
Special masala:-
Corriander seeds- 1 tbspn
Cinnamon stick- 1
Star anise- 1
Cumin seeds- 1 tbspn
Cloves- 4-5
For Marination:-
Mutton pieces- 500gms
Salt- as per taste
Turmeric powder- 1 tsp
For Masala:-
Onion- 1 nos
Tomatoes-1 nos
Chilli powder- 1 tbspn
Turmeric powder- 1 tsp
Ginger garlic paste- 1 tsp
Curd- 1 tbspn
Ghee- 2 tsp
For topping:-
Onion- 1 nos
Cashews- 1 tsp
Kishmis- 1 tsp
Corriander leaves- 1/2 cup
Saffron- 2 strands
Milk- 1/2 cup
For rice:-
Basmati rice- 2 cups
Salt- a pinch
Water- 4 cups
Now let's start..
Step1:-
Roast all ingredients listed under special masala and powder it smooth. Cook mutton with salt, turmeric and water and wait for 6 whistles.
Step 2:-
Now let's cook rice. Soak rice for around 30 minutes. Boil lots of water with salt. Once it boils, add in soaked rice and cook till it's 3/4th done.. Make sure of the consistency of rice. .. It will take around 6-8 minutes..
Step 3:-
Now let's prepare the topping. Heat ghee in a pan and add onions and fry till golden. In the same pan, add cashews and kishmis. Chop some corriander leaves and keep aside. Cut pineapple slices and keep aside..
Step 4:-
In the same pan, saute onions well. Add tomatoes and saute till mushy. Add in spice powders. Mix well and add cooked mutton pieces. Add in special masala powder. Mix up well and add curd as well. Drain of the remaining water and mix well
Step 5:-
Now assemble the biriyani. Add a portion of cooked rice on the bottom of the serving dish. Add in masala on top of the rice. Add in half of fried onions, cashews, kishmis and corriander leaves. Spread rice on top of masala. Fill the top with remaining onions, cashews, kishmis, corriander leaves and pineapple pieces... Add in milk mix and ghee on top of this.
Step 6:-
Heat a tawa and place the biriyani pot and top of this and cook for 10-12 minutes in low flame. Mix up well and serve......
Now towards step wise illustrations...
Step 1:- Making special masala...
Dry roast all ingredients listed under special masala and powder it
Now let's cook mutton. Take mutton pieces in a pressure cooker
Add in salt and turmeric
Add water and cook for 6 whistles
Step 2:- Preparing rice
Soak rice for 30 minutes
Bring lots of water to boil with salt
Cook till rice is 3/4th done. Don't overcook
Drain it up and fluff it up with a fork and allow it to cool
Step 3:- Prepare the toppings
Fry onions, cashews and kishmis
Fry and keep aside
Add saffron strands in warm milk
Cut and keep pineapple slices aside
Chop corriander leaves and set aside
Step 4:- Preparing masala
In the same pan, add onions and saute well
Add in tomatoes and ginger garlic paste and cook till mushy
Add in chilli powder and turmeric powder
Once mixed, add in cooked mutton pieces to it
Add special masala
Mix it well
Add in curd and mix up the masala
Step 5:- Assembling part
Spread rice evenly on to a serving dish
Spread the masala evenly on top of it
Add in corriander leaves and half of fried onions, cashews and kishmis
Spread rice on top of it
Add remaining topping part and corriander leaves
Add saffron milk to it
Add in pineapple pieces
Add ghee to this
Close it with a lid
Step 6:- Now let's dum it..
Heat a pan
Place the biriyani pot on top of it. Cook on low flame for 10- 12 minutes
Now mix it up well and serve hot
