Squid Masala Roast/ Kanava Masala Roast



Though I have enjoyed squid dishes at restaurants, I never had attempted it at my kitchen. Yesterday hubby bought some squid and I was taken aback because apart from cooking, cleaning squid is a tedious task. It needs lots of patience and we have to be careful in the process as well. I never cleaned or prepared squid earlier, so this was my first attempt. 
I googled for videos depicting cleaning of squid and followed the steps accordingly. Tadaaaaa! Itz done! Now to cook the same. I had squid roast once from a restaurant and it was good. It was sooo spicy and juicy. I ought to prepare the same. It turned out really well and tasted same as I had the one in restaurant. So now let's move to the recipe.....

Ingredients
For masala:-
Onion- 1 cut to cubes
Green chillies- 1 slit
Chilli powder- 1 tsp
Ginger garlic paste- 1 tsp
Curry leaves- 1 spring
Oil- 1 tbspn

For Marination:-
Squid- 500 GM's chopped
Red chilli powder-1 tbspn
Turmeric powder- 1 tspn
Ginger garlic paste- 1 tsp
Salt- as per taste

Add-on/ optional:-
Water- 1 tbspn
Oil- 1 tspn
Pepper powder- 1 tspn

Now let's begin.
1. Marinate squid with chilli powder, turmeric powder and ginger garlic paste. Don't add salt now. Let it rest for some 15 minutes
2. Heat a pan with oil and add curry leaves.
3. Saute onions and green chillies well
4. Add some red chilli powder and give a good mix. Ground masala is ready
5. In another pan heat some oil and add curry leaves. I used an earthen pot.
6. To this add the marinated squid and mix well. Water will leach out and cook till it's half done keeping on a medium flame. It will take around 20 minutes. At this point, you can add salt
( Over cooking squid makes it rubbery)
7. Now add the ground masala and mix well. Move to a low flame and cover and cook.
8. You may add a splash of water to bring all ingredients together. If you need a bit ore spiced masala, add in pepper powder. This step is optional
9. Once it reaches the consistency, i.e all water is evaporated, add in coconut oil and give a final mix. This step is also optional..
10. Serve with rice or your favourite rotis/ parathas

Now towards step wise illustrations..

1. Take your cleaned and chopped squid

2. Marinate with all ingredients listed above except salt

3. Heat a pan with oil and saute onions

4. Add in curry leaves and green chillies

5. Add in chilli powder and cook till masala is done


6. Heat a pan add oil and curry leaves


7. Add in marinated squid and mix well

8. Add in chilli powder

9. Water will leach out and cook till it's half done

10. Add in salt at this stage. This is the half cooked consistency. Don't bother about excess water. We can drain it out

11. Now add a pinch of sugar to balance the taste

12. Add the prepared ground masala to this and mix well

13. Add pepper powder and oil. Drain the excess water and mix well. This is an optional step, you may directly evaporate excess water


14. Serve hot
