Mushroom Masala
I have been receiving mails to post some vegetable recipes for chapathis and phulkas. As I scrolled down through my drafts, I came across a recipe which I made a couple of days back. It is a simple mushroom gravy with a twist in it... As you make this, your kitchen will be so aromatic and it will be just wow!!!! I love this gravy pretty much and I hope you guys will also love it....

Ingredients
Mushrooms- 6 large chopped finely
Onions- 1 large chopped
Chilli powder- 1 tsp
Corriander powder- 1 tsp
Kasuri methi- 1 tsp
Salt- as per taste
Water- 1/4 cup
Oil- 1 tsp
For ground masala
Coconut- 1/4 cup
Fennel seeds/ sombu- 1 tsp
Cinnamon- 2 stick
Curry leaves- a handful
Lets begin...
1. Dry roast all ingredients listed under ground masala. Move it to a blender. Add in a splash of water and make a smooth paste
2. Heat oil in a pan and saute onions well..
3. Add spice powders and mix well. Make sure it doesn't get burnt
4. Add in mushrooms and mix it up well
5. Now add the ground masala and water. Mix well
6. Allow it to boil for 5 minutes and add in kasuri methi leaves
7. Once it reaches a semi gravy consistency, switch off flame.
8. It is ready to be served now
Now towards step wise illustrations...
1. Dry roast coconut, fennel seeds,cinnamon stick and curry leaves
2. Roast it..
3. Roast again
4. Roast till it turns golden and will have a nice aroma
5. Move it to a blender and add a splash of water
6. Make a smooth paste out of it
7. In a pan heat oil and saute onions well
8. Add on spice powders
9. Mix it up well. Dont burn it
10. Add in chopped mushrooms
11. Season with salt and mix well
12. Add in ground masala and water
13. Mix it well and bring to boil
14. Add in kasuri methi leaves and final mix. Serve hot
15. I served with chappathi,mutton peraln and water melon slices......
